<ul>
<li>Soba in reference to the traditional Japanese soba cha (literal translation: buckwheat tea, or more precisely buckwheat infusion)</li>
<li>Khoï in reference to the Khoïsan people who have been consuming and harvesting rooibos in the Cederberg mountains of South Africa for several hundred years.</li>
</ul>
<p>I wanted to find this green and toasted plant duality present in Genmaicha, Japanese green tea and toasted rice, but without theine, which is why I associated a green rooibos, with fresh plant notes, with buckwheat seeds bringing a toasted facet, dried fruits.</p>

    <td colspan="2"><p>I discovered drinking cereals while traveling in Japan and South Korea. Infused seeds are very common there. This custom is also found in our latitudes, notably the famous caffè d'orzo in Italy, made with roasted barley seeds that are infused. This taste for infused seeds led me to the paths of a couple of Breton producers specialized in barley and buckwheat roasting: <a href="/en/collections/producteurs-yoann-gouery">Graine de Breton</a>. I combined their products in a 100% French recipe mixing barley and buckwheat. The buckwheat brings sweetness and smoothness, while the barley completes with body and a toasted facet more assertive, all with a slight salty sensation very pleasant making a nourishing drink but without the calories!</p>

    <td colspan="2"><p>This creation is a new crossbred encounter that I worked with a Chinese wulong called Narcissus in its province of origin, Fujian, with woody, dried fruit and roasted notes and a blend of seaweed from Brittany - sea lettuce, dulse and nori - with lightly salty and iodized notes for an energizing and comforting effect. Alga Narcissus goes wonderfully well with everything that comes from the sea, but also with buckwheat, a buckwheat pancake with cheese for example. Preferable without milk, except a vegetable milk, almond, spelt or rice.</p>

    <td colspan="2"><p>Coming from a garden located at 700m altitude in the heart of the Phoenix Mountains of Guangdong Province as the <a href="/en/products/the-du-mont-phoenix ">Tea from Mount Phoenix</a>, it comes from one of the many cultivars characterizing this appellation: <em>Yin Hua Xiang</em>, carefully produced and worked by the Wen family. <em>Xiang</em> means perfume or smell and <em>Yin Hua</em> corresponds to honeysuckle. It is one of these great vintages of small producers, handcrafted and blossoming with sweet, milky and flowery notes of white flowers with a beautiful persistence. It is a tea to be kept for a long time and can be revived by lightly roasting it over the years.</p></td>

    <td colspan="2"><p>This tea comes from a small ecological garden located at an altitude of 1,000 m in the Ali Shan - or Ali Mountains - in the center of the island of Taiwan.</p>
<p> This wulong is part of the large family of mountain teas from Taiwan called Gao Shan Cha. In her village where a large Tsou indigenous community lives, producer <a href="/en/collections/producteurs-silvia-vayiyana">Silvia Vayiyana</a> works her Ali Shan Wulong "Anaiza" tea (which is similar to a PDO) so that it improves with age by gently roasting it. . She nicknamed it "Anaiza" which in Tsou means conviviality, sharing, a real welcome tea when you arrive in her village. Very sweet, very delicious, it has a vegetal and slightly floral freshness, then a sweet vanilla base.</p>
