Torsades de Lotus

This large-leaf green tea called Shan, from the same cooperative as Lao Cai's Shan Green Tea, has been hand-blown in the purest Vietnamese tradition with freshly harvested lotus stamens then removed so as not to add bitterness. Like jasmine tea like Torsades de Jasmin or Pépites de Jasmin , the lotus flowers are harvested early in the morning, the stamens are removed manually and then brought into contact with the tea. Depending on the desired power, we repeat this enfleurage with new stamens 6 to 7 times in a row over 2 days, quite an art! Twists of Lotus, naturally scented, develops the woody plant flavors with a slight astringency of Shan tea, supported by the spicy side of lotus.
