Himalayan Shangri La, located in the Ilam Valley at 1 500m altitude, was launched in 1999 and produces only organically grown teas. I discovered its vintages in 2009, and it was love at first sight! I was able to investigate and select the seasonality and the colors that I preferred. And I am really happy to offer you here a selection of two of their vintages: this version worked in black tea that I named Black Shangri la, and a version worked in white tea, that I named White Shangri la.For this oxidized version, I chose an autumn vintage. Its fluffy twisted leaves develop soft woody and fruity notes in the cup, perfect for a meal. With an apricot pie, sheep cheese or a lamb tagine with prunes.
